Zucchini latest and greatest version = zoodles!!
From time to time, a really new and inventive way to prepare a favorite food shows up. In addition to new recipes, sometimes even a new kitchen tool is invented. Frequently these new contraptions and recipes end up in the bottom of a kitchen drawer. Not this time! In my opinion, the latest and greatest example of this are ZOODLES! Wonderfully curly and swirly zucchini noodles.

Zucchini has long been associated with breads, cakes, and sauteed vegetables. I frequently add it to my farmers market spaghetti sauce. Zucchini can be chopped, grated, or mandolined to add a surprisingly rich and dense flavor to your recipes. As far as I am concerned, the best and newest way to prepare and devour zucchini is with a spiralizer. All of the sudden you have a a big huge bowl of curly noodles just begging to be in your new favorite salad.

As soon as I saw these gorgeous curly noodles showing up everywhere, I immediately decided to bump up our Thai peanut sauce and have a party. Whenever a new sauce is being conjured up in our kitchen, my favorite mad sauce scientist partner is my daughter Maddie. As I have told you before, my baby girl has a unique and wonderful talent of tipping an ordinary sauce into the mouth watering category!

We started with our usual suspects of sweet chili glaze and chili paste. To that we added rice vinegar and white balsamic vinegar. Lemongrass added the perfect addition of a little crunch, together with chopped ginger and cilantro for a fabulous symphony of flavors. All of these delectable ingredients mixed with your favorite peanut butter make the perfect stick to your zoodle noodle sauce. Every zoodle noodle bite is coated with this lip smacking sauce. It just does not get any better! We always love to squeeze fresh lime juice on the top of the salad right before it is served. It adds to the brightness of the ingredients and zings everything up a notch. If you have not jumped on the zoodle noodle train, I hope that this peanutty sweet and spicy version will have you zoodling along with the rest of us!

zucchini zoodles drenched in peanut chili and lime sauce

oodles of curly zucchini noodles and carrots have never been so happy! This delectable peanutty, spicy, and citrusy sauce will have you grabbing your spiralizer!
- Prep Time: 40 minutes
- Cook Time: only for chicken
- Total Time: 1 hour
- Yield: 4-6 servings 1x

Ingredients
8 medium sized zucchini spiralized
4 medium carrots spiralized
2 big red peppers chopped
2 cooked and chopped chicken breasts ( or the white meat from a rotisserie chicken )
Sauce:
1 TB rice vinegar
1 TB white balsamic vinegar
2 TB fish sauce
Grated zest and juice from 1 lime
4 TB sweet chili sauce
2 TB chili paste
3/4 cup peanut butter
2 TB freshly grated ginger
1/2 cup freshly chopped cilantro
3” stalk of freshly chopped lemongrass
Topping:
Freshly chopped peanuts
Fresh lime juice
Instructions
Spiralize the zucchini. I like to use the thin setting
Place spiralized noodles in a colander over a separate bowl to drain
Spiralize the carrots
Chop the peppers
Place vegetables in a large bowl
Add chopped chicken
In a separate medium sized bowl, mix together the sauce ingredients with a whisk
Pour sauce over vegetables and chicken
Carefully blend the sauce to cover all of the vegetables and chicken
Squeeze fresh lime juice over the salad just before serving
Top with fresh peanuts and serve
