Day 12 – white chocolate cheesecake with raspberry grand marnier glaze!

All of the sudden we have arrived at the 12th day of my winter white edition of the 12 Days of Christmas. Where did the time go? I have loved focusing on all things white, and I hope that you have found some inspiration for your holiday baking! With this in mind, I wanted to complete the 12 days with one of our treasured family recipes. White chocolate cheesecake frequently makes the holiday menu at our house and here is why…

The first thing that is a surprise when you serve this cheesecake is that there is no crust! At first everyone is surprised, but then they love this updated version of a favorite dessert. The second thing that everyone loves is the rich texture and delicious flavor that the white chocolate adds. The white chocolate blends beautifully with the sour cream to create a cheesecake with a perfect texture.

The third amazing quality if this very special dessert is the mouth watering glaze. Especially when you find out how embarrassingly easy it is to make! All you have to do is throw some frozen raspberries, sugar, and Grand Marnier in a food processor. After just a minute or so, you will have a lip smacking sauce on your hands! Raspberries and Grand Marnier are a match in heaven. I have never met anyone who does not ADORE this glaze! The best part about this glaze is that you can use the leftovers (if there are any) on ice cream. Or you can be like me and keep sampling it by the spoonful.
This holiday dessert is a show stopper with the shocking raspberry red and snow white color combination. You will be hooked from the first creamy bite. In conclusion, this cheesecake is the showstopping one you have been searching for!

- Prep Time: 30 minutes
- Cook Time: 1 hour
- Total Time: 1 1/2 hours + cooling time
- Yield: 9" spring form pan 1x

Ingredients
12 oz of white chocolate broken into small pieces (I like ghiradelli)
3 eight oz packages of softened cream cheese
1/2 cup sugar
1 TB fresh lemon juice
2 cups of room temperature sour cream
4 eggs
2 tsp vanilla
Topping:
2 cups of sour cream
3 TB sugar
1 tsp vanilla
Glaze:
12 oz. bag of frozen raspberries
1/4 cup sugar
3 TB Grand Marnier (alternatively yo may use a blended orange juice)
optional garnish – fresh raspberries
Instructions
Preheat oven to 400 degrees
Melt the white chocolate in a glass bowl in the microwave. Melt at short intervals of 22 seconds at a time, stirring between heating. Alternatively you may use a double boiler
Cool slightly and set aside
Combine cream cheese and sugar and lemon juice in a mixing bowl and mix until well combined
Add melted chocolate, sour cream, eggs and vanilla
Mix until well combined scraping down the bowl one time
Pour the batter in a 8-10″ spring form pan
Bake for 10 minutes
Lower the temperature to 300 degrees
Continue baking for 45 minutes and set
Remove from oven and raise temperature to 350 degrees
Prepare sour cream topping:
Mix sour cream, sugar, and vanilla in a small bowl
Spread over warm cheesecake
Return to the oven and bake for 4 minutes
Remove from oven and cool
Refrigerate overnight
Raspberry Grand Marnier glaze:
Pour frozen raspberries, sugar, and Grand Marnier in a food processor
Mix until well blended
Right before serving, spoon glaze over the top of the cheesecake. Alternatively you may pour the sauce over each individual piece
If desired you may garnish with fresh raspberries
