Day 8 – sour cream raisin bars
Do you ever count how many Christmas cookies you pop in your mouth?
All things considered, the Christmas cookie tray is most always the center of any holiday gathering. All of those sweet, pop in your mouth treats tempting everyone. Before you know it, you have eaten 5 or 6 or 7 cookies. Every family has their favorites, and ours is no exception. Sour cream raisin bars have been on our Christmas tray for many years. They may not be the fanciest cookie on the tray, but they are incredibly rich and delicious.

This is another cherished recipe from my friend Barb. Whenever you have been lucky enough to receive one of Barb’s recipes, hold on tight! It will become one of your family favorites. I always think of Barb’s friendly smile and her big hugs when I bake her recipes. Now I will admit, sour cream raisin bars had to work their way up my favorite chart, but once they wiggled their way to the top, they were here to stay!
The recipe starts with a mixture of oatmeal, brown sugar, flour, and melted butter. To put it another way, cookie base heaven! This mixture is split in half and pressed on the bottom of a 9 x 12 pan. The base is cooked for 20 minutes, giving you the time to prepare the filling. The filling of this bar comes from its name. Sour cream and raisins are mixed together with egg yolks and sugar, and are cooked on top of your stove. When the filling has become bubbly and thickened, it is poured over the cooked base and returned to the oven.

I started thinking about all of the ingredients in the bars, and I discovered that they contain all of my favorite breakfast treats. Eggs, oatmeal buried in golden raisins and brown sugar, and sour cream as a substitute for my favorite yogurt. No wonder I love these bars so much! If you are looking for a simple but delicious cookie bar to be the “b” actor on your cookie tray, look no further! Every cookie cannot be the cut out fancy pants variety. Once your family and friends taste this one, I guarantee they will be back for more!

an ooey gooey sour cream and raisin center sandwiched between 2 layers of oatmeal and brown sugar! Love at first bite!

Ingredients
Crust and Topping:
1 3/4 cup oatmeal
1 3/4 cup flour
one cup of melted butter
1 tsp baking soda
Sauce:
4 egg yolks
1 1/2 cups sugar
3 TB cornstarch
2 cups sour cream
2 cups of golden raisins
Instructions
Heat oven to 350 degrees
Combine crust ingredients of crust in a medium sized bowl and add melted butter
Pat half of crust in 9 x 12 pan
Bake for 20 minutes
While crust is baking, prepare the sauce
In a medium saucepan, combine egg yolks, sugar, cornstarch, sour cream, and raisins over medium high heat
Bring to a boil stirring constantly
Lower heat and cook for a few minutes stirring constantly
Pour over cooked base and sprinkle remaining unused crust over the top
Bake for 20 minutes
Cool and cut into bars
