Guacamole = Party Coming Your Way!
Who doesn’t love guacamole?? Perfectly ripened avocados, hand mashed together with darling little cherry tomatoes and fresh lime and lemon juice. And by hand mashed, I am referring to an old fashioned potato masher for the perfect consistency. I have never met a guacamole that I didn’t like, which is lucky because it seems to be everywhere these days. A perfect friend for a chip, a delicious spread for a sandwich, and lately it has found its way to our morning toast! I like avocados plain with a little salt and freshly squeezed lemon juice. That is good enough for me, but when you mix the avocados together with a few more fresh ingredients, it becomes irresistible!

Secret Ingredient Alert…
My version has tomatoes, garlic, jalapenos, cilantro, parmesan cheese, and fresh lemon/lime zest and juice. I know, I know, cilantro is another polarizing ingredient. You either love it or hate it, and there does not seem to be any middle ground. In addition to all of these delicious ingredients, I thought it needed something else to raise it to the next level. After experimenting with a few different ideas, I decided to try roasted pepitas. A star was born! All of the sudden really yummy guacamole had morphed into spectacular, crunchy, where did the whole bowl go guacamole. The roasted pepitas add the perfect crunchiness! Crunchy guacamole and crunchy veggies and chips are a match made in heaven.

Scoopalicious guacamole is delicious with any of your favorite chips. These days the chip aisle has so many new varieties to try. I like to mix a few different chips on the platter for fun, and it is also pretty to see the different colors and textures together. Blue corn chips and sweet potato chips are a great pair to try on your next platter. Another scrumptious idea for this fabulous guacamole is spreading it on a SLT, more specifically a salmon, lettuce, and tomato sandwich. The next time you are grilling salmon, save some for the next days lunch and give it a try!

A scrumptious and scoopworthy guacamole packed with tomatoes, citrus, parmesan cheese, and a secret ingredient….

Ingredients
4 soft to the touch avocados, peeled and cut in squares
1 cup of cherry tomatoes cut in thirds
1/2 lime juiced and entire lime zest
1/2 lemon juiced and entire lemon zest
1 chopped jalapeno
3–4 cloves of minced garlic
1/2 cup grated parmesan cheese
2/3 cup roasted pepitas
1/2 cup chopped cilantro leaves and stems
salt and white pepper to taste
Instructions
Half and pit the avocados and cut in squares. Place in medium sized mixing bowl and mash lightly with a potato masher
Sprinkle with salt and white pepper
Add freshly squeezed lemon and lime juice and zest
Add tomatoes and sprinkle with salt and white pepper
Gently incorporate the minced garlic, jalapeno, parmesan cheese, cilantro and pepitas and stir to desired consistency
salt and pepper to taste
Serve with EVERYTHING
