Summer is the best time to relax with family and friends. My best summer picnic or back yard barbecue always ends with someone (or multiple someones) licking the bottom of the potato salad bowl. This potato salad is creamy, crunchy, thick in texture, zingy with citrus, crunchy with pea pods, and exploding with fresh herbs.

This potato salad recipe evolved from “how can we smash everything from our farmers market bounty into one big potato salad bowl?” It is one of those recipes that everyone loves, and repeat guests to our home get giddy when they walk in and see it waiting for them! The secret to this perfect potato salad is the creamy sauce loaded with fresh herbs. The base of this creamy sauce is cream cheese. It add just the right amount of thickness to cling on to the potatoes and pea pods. And then there is the fresh lemon zest and juice that adds a delicious freshness. Equally important are all of the fresh herbs, which are magical this time of the year.

Perfect Potato Salad
Just one bite of this perfect potato salad will have you craving another – a scrumptious combination of creamy potatoes and sugar snap pea pods mixed with an explosion of herbs and citrus delight!

2 pounds of potatoes – I like to use fingerling, new potatoes, and blue if available! cooked and sliced diagonally
1 pound of sugar snap pea pods stripped and chopped
6 oz. softened cream cheese
1/4 cup buttermilk (may need more to achieve desired thickness)
1/3 cup mayonaise
4 tsp. white balsamic vinegar
1 TB grainy mustard
1 TB creamy dijon mustard
zest from 1 lemon
juice from 1/2 lemon
salt and white pepper to taste
1/4 cup each fresh dill, Italian parsley, mint, basil, cilantro,
6 sprigs of fresh thyme
1 sprig of chopped fresh rosemary
Boil potatoes in salted water until fork tender
Drain and leave in sauce pan with clean kitchen towel on the top to keep warm
Clean and chop sugar snap pea pods
Mix creamy sauce ingredients together in a big bowl. You may use a whisk to make smooth, or alternatively you may use a food processor if desired
Add warm potatoes and sugar snap pea pods to big bowl with creamy sauce and carefully mix
May serve semi warm or refrigerate until serving. It is delicious both ways!
