HOME RUN recipe coming right up!… And it has a mango in it!
From time to time a recipe comes along that hits a home run every time you make it. I love mango everything!! For this reason, mango salsa has been a staple at our house for many years. To begin with, LOOK AT THAT GLORIOUS COLOR!! There is nothing more inviting than a big bowl of gorgeous mangoes mixed with deep red peppers and crisp green jalapenos.

What makes this magnificent mango salsa sing is the addition of the freshly grated ginger and chopped cilantro. Especially when the cilantro is fresh from farmers market. Every week my bags are overflowing with big green bunches that get added to everything. What better way to get ready for summer’s gigantic burst of flavors than to whip up a bowl of mango salsa? The anticipation of all of the barbecues and picnics coming our way make this salsa a magnificent choice.

We LOVE this salsa on or with EVERYTHING! Serve it plain with chips, (blue flax seed are my favorite) drizzled on a bratwurst, (ON WISCONSIN) or as a citrusy accompaniment to your favorite grilled chicken or fish. This salsa has that fresh meets sweet meets spicy combination. A perfect friendship in my book! Who are you in that group of friends? The first time we made this salsa, we “taste tested” our way to the bottom of the bowl. Note to self – TRIPLE the recipe the next time you make it! Whip up a bowl while the mangoes are so perfectly ripe. Your family and friends will be so happy that you did!

Magnificent Mango Salsa

This magnificent mango salsa will keep you scooping until you have run out of all the chips in your pantry!
- Prep Time: 20 minutes
- Total Time: 20 minutes
- Yield: 2-3 cups depending on the size of mangoes and peppers 1x
- Category: salsa
- Method: chop and mix
Ingredients
3 ripe mangoes (keep in a brown bag for a few days to reach the perfect ripeness)
1 big red pepper chopped in small pieces
1 jalapeno finely chopped
juice and zest from 1 lime
1/3 cup of rough chopped cilantro
2 TB freshly grated ginger
salt and white pepper to taste
Instructions
Peel and chop mangoes in small chunks
Chop pepper and jalapeno
Combine all of the above in a medium sized bowl
Add the cilantro, ginger, lime juice and zest, and salt and white pepper
Gently mix together, keeping some of the mangoes in small chunks
Stand back and watch it disappear!
