Make way for the grilled avocado bandwagon!
All of the sudden everyone is grilling avocados. Well I am going to jump right on that bandwagon! I love avocados, and when I can throw one more thing on the grill I will! There is something so decadent about the grill marks on the already pretty avocado. Grilling the avocado creates a buttery softness and richness that is hard to beat. I started thinking about the little “bowl that was created where the avocado pit had been removed. All of a sudden a new hors d’oeuvre was born.

A whole new world…
I mixed some gorgeous farmers market heirloom tomatoes in a bowl with some crumbled feta cheese. Next, I added some white balsamic to the mixture. It is as easy as that! It is truly the easiest thing I have ever made. I am not even sure that it even qualifies as a recipe! There are so many different ways to emphasize the buttery richness of the grilled avocado. For example, how about leftover chicken salad? Or any kind of salsa, roasted peppers mixed with any variety of cheese. This has opened up a whole new world for a light lunch, or a starring member of an appetizer tray.

Beep Beep Beep! here I come!
Not only does the avocado create a little bowl to put something delicious in, but by itself IT IS AN ACTUAL BOWL! All your family and friends need to do is pick up the avocado and scoop out the delicious buttery center. What a surprisingly new way to have fun at your next family dinner or cocktail party. In short, not only am I on the bandwagon, I am beeping my horn all the way to the dinner party! I love when something different creates a whole new food chapter adventure to explore!

Grilled Avocados Overflowing with Tomato and Feta

Welcome to your new favorite way to serve your family and friends! Grilled avocados will have you scooping to the bottom of your new little avocado bowl!
- Prep Time: 10 minutes
- Cook Time: 6 minutes
- Total Time: 20 minutes
- Yield: 8 halved avocados 1x

Ingredients
4 avocados cut in half and pitted
olive oil for brushing avocado for grilling
10–12 heirloom tomatoes chopped
4 oz. feta cheese crumbled
2 TB white balsamic
salt and white pepper to taste
Instructions
Half and pit the avocados (ripe avocados work the best – you may want to keep them in a brown bag in your pantry)
Prepare grill of your choice – 400 degrees for a gas grill
Brush the avocado halves with olive oil and sprinkle with salt
In a medium bowl, mix together tomatoes, feta, and balsamic vinegar
Salt and white pepper to taste
Place avocado halves on a clean preheated grill
Cook for 2-3 minutes, then turn them for a quarter of a turn and cook for 2 more minutes until desired hash tag marks are achieved
Remove from grill and place on serving platter
Spoon tomato/feta mixture in the removed pit section of the avocado
