day 4 – four calling bird ebelskivers filled with blackbird blackberry glaze
what is your favorite nursery rhyme??
Four calling birds makes me think of the black crows that like to caw caw caw in my backyard in the morning. When I was researching the tradition of the 12 days, I kept reading about day four’s calling birds starting out as “colly birds.” At some point, colly birds morphed into calling birds. In my head, calling birds = black birds = my favorite nursery rhyme of four and twenty blackbirds being baked in a pie! Black birds led to black berries, and pie led to ebelskivers. And so here we are on day four with blackberry ebelskivers!

ebelskivers = darling little pancakes!
Sooner or later, your path will lead you to ebelskivers! Ebelskivers are darling little “pancakes” stuffed with the filling of your choice. I think that they are particularly scrumptious with your favorite fresh fruit filling. We especially like making them when we have family and friends for the weekend. Everyone gets to choose their favorite filling, and the rest is history! All you need is a friendly person to run the hot fresh ebelskivers to the table and you are all set.

Ok, back to the blackberries… I wanted to mix the gorgeous blackberries together with some special holiday ingredients. Specifically, chambord, lemon, and fresh thyme. The chambord adds a rich and syrupy thickness to the blackberries, and makes them exceptionally lip smacking in the middle of your ebelskivers.

One little thing that I forgot to point out is that you do need to invest in a special ebelskiver pan. It is well worth the effort, because everyone in your family will love coming up with new filling ideas to dollop between the batter. As long as I can remember, I have liked tweaking the recipes that I make by adding a little of this, or taking away a little of that. The one exception to this rule is when I purchase a specialty pan, like an ebelskiver. I always try the suggested recipe that is included with the packaging, and in this case we have a winner!! The creative part is imagining all of the different flavor combinations that you can use to have the best ebelskivers in the neighborhood!

hot from the pan ebelskivers filled with a blackberry glaze that will keep you popping these in your mouth long after breakfast is over!

Ingredients
ebelskivers:
2 cups flour
1 tsp baking powder
1/2 tsp salt
1 TB sugar
4 eggs – separated
2 cups milk
4 TB unsalted butter – melted + more for cooking
Blackberry filling:
1 6 oz. package of fresh blackberries for glaze, and additional blackberries for serving
1–2 TB fresh lemon juice
zest from 1 lemon
2 TB sugar
2 TB chambord raspberry liquour
5 fresh thyme sprigs stripped
For serving:
Pure maple syrup
Instructions
Make the blackberrry glaze:
Combine blackberries, lemon juice, lemon zest, sugar, and thyme in a medium saucepan
Cook over medium heat until bubbly and blackberries have reduced and softened
Add chambord and cook for 1-2 more minutes
Remove from heat and set aside
Make the ebelskivers:
In a bowl, whisk together the flour, baking powder, salt and sugar
In a small bowl, lightly whisk the egg yolks, then whisk in the milk and 4 TB of melted butter
Whisk the yolk mixture into the flour mixture until well combined; the batter will be lumpy
Beat the egg whites on high speed until stiff – 2-3 minutes
Using a rubber spatula, gently stir the whites into the batter in two additions
Put 1/4 tsp butter in each well of the ebelskiver pan.
Set over medium heat until butter begins to bubble
Pour 1 TB of batter into each well
Put 1 tsp of filling in the center of each pancake
Top with 1 TB batter
Cook until bottoms are golden brown and crispy – 3- 5 minutes
Using the 2 wooden skewers, flip the pancake over and cook until golden and crispy
Serve with pure maple syrup
