My favorite way to start the day is with a plate of fluffy eggs mixed with every kind of vegetable. The combination of eggs with peppers, mushrooms, and fresh thyme is irresistible. A power packed protein breakfast is the best way to keep it moving for the day! Many of my days do not have a built in lunch hour, so it is important to start the day off right.

I can continue to work long past noon as long as I begin the day with a satisfying and delicious plate of eggs. Especially when there are fabulous fabrics and furniture to seek out for my clients! I love being knee high in fabrics! It is truly a joy to have the opportunity to work with so many different people and projects. I love that my day is never the same as the day before. Therefore it is even more important to make sure I start the day right with a fluffy eggs and vegetables.

sizzling peppers, mushrooms, and thyme
In addition to being a great protein source to start your day with, eggs can help use up your leftover veggies. Especially when you have peppers, mushrooms, and fresh thyme in the refrigerator. These eggs have my latest favorite flavor combination. There is something magical about the sizzle of butter with the fresh vegetables and thyme. This combination alone would be a great beginning to so many meals, but they are especially delightful when they are mixed together with fluffy eggs.
It is always important to have a great saute pan to make your eggs in. I prefer the non stick variety, because it is so easy to move your ingredients around while your eggs are cooking. It is also helpful to have when you are sliding your eggs out on to your plate or platter. Add a little cheese at the end, and you will have a great breakfast to begin your day.

Fluffy eggs combined with peppers, mushrooms and fresh thyme will power pack your day!

Ingredients
3 eggs
1 diced pepper
8 sliced mushrooms
7 sprigs of fresh thyme stripped from the stem
1–2 TB butter
1/4 cup milk
2–3 TB grated parmesan cheese
salt and white pepper to taste
Instructions
Melt butter in a saute pan on medium heat
Add peppers, mushrooms, and fresh thyme and saute for 2-3 minutes
Remove peppers, mushrooms and thyme mixture from pan and set aside
Crack 3 eggs in a medium bowl
Add salt and white pepper
Whisk quickly with milk until frothy
Add egg mixture to reserved saute pan on medium heat
Allow to cook until edges of eggs start to flutter away from the sides of the pan
Push the outside edges of the eggs to the center of the pan, allowing the top side of the eggs to cook
Just before the eggs are cooked, add grated parmesan cheese and reserved peppers mushrooms and thyme
Heat through to melt the cheese and warm the vegetables
Turn out on to serving plate
