when did you bake your first bundt cake?
To begin with, who doesn’t love a bundt cake? They can be baked for breakfast AND dessert in endless flavor combinations! Most kitchens have a bundt pan hiding somewhere, and for this reason bundt cakes are usually the first cake you bake. When I was growing up, I only remember the classic tube bundt pan, but now there are endless possibilities! it seems like every season brings fun and exciting bundt pan opportunities. Whenever you think of the 12 days of Christmas carol, most everyone’s favorite day to sing along to is day 5 and its golden rings. You may get some of the other days lyrics goofed up, but everyone remembers the fiiiiiiiiive goooooooooolden rings! I immediately thought of delicious rich chocolate mini bundt cakes when I was brainstorming for day five of my twelve days of Christmas treats.

what is your favorite frosting on your chocolate cake?
Chocolate cake can be interpreted in so many different ways. Plain old chocolate cake is fine, but as you know by now, the frosting is my favorite part of cake baking! I knew I wanted a rich and gooey chocolate cake with a gloppy whipped frosting that would make you think of snow. The frosting starts in the traditional way with butter and powdered sugar. I like to whip this part of the frosting until it is light and fluffy. Equally important to the butter and sugar are the flavorings that you add to it. Kahlua brings a particularly rich and decadent taste to the buttery beginning to this frosting. The addition of whipping cream makes this holiday frosting especially gloppy. Just keep pouring a little at a time to achieve your desired level of gloppiness.

So now that we have the ring part figured out, how can we make them more golden? I needed something to sprinkle on the top to add the midas touch. Thank goodness for edible golden stars! Sparkly, gold, and tiny stars were the perfect crowning touch for my bundt cakes. The most fabulous way to celebrate everyone’s favorite day of the 12 days of Christmas. In addition to sparkling up your Christmas platter.

Ingredients
chocolate bundt cakes:
3 cups flour
2 cups sugar
1 tsp salt
2 tsp soda
1/2 cup cocoa
2 TB vinegar
2/3 cup oil ( I like canola)
1 tsp vanilla
2 cups cold water
Whipped cream frosting:
1 1/2 cups butter softened
3–4 cups powdered sugar for desired consistancy
3–4 TB Kahlua
1/2 to 1 cup whipping cream for desired consistancy
Optional garnish:
edible golden stars
Instructions
Preheat oven to 350 degrees
Prepare desired cake or specialty bundt pans. For specialty bundt pans I like to use the cooking spray with flour
In a large bowl combine flour, sugar, salt, soda and cocoa
Pour vinegar,oil, vanilla, and water over the top of the dry ingredients
Stir until combined and no dry ingredients are visible
Pour in prepared pan (s) and bake according to pans directions ( -25 minutes for a standard cake pan, -17 minutes for a specialized bundt pan. Bake just until your cake tester or toothpick comes out clean
Cool cakes on a rack
Whipped cream frosting:
Beat the butter for 4-5 minutes until light and fluffy
Add desired amount of powdered sugar
Add Kahlua
Add whipping cream to achieve desired consistancy of gloppiness
Ladle frosting over cooled cakes
Optional:
Sprinkle with edible golden stars
