Day 3 – cheery champagne cocktail

Whenever I think of a special occasion, my mind immediately wanders to champagne! And while it is great to pour a glass of the plain bubbly to enjoy, it is especially exciting to make a cocktail with it! I have always loved to serve a signature drink when my family and friends come over. From time to time it is really fun to plan a celebratory drink with champagne. Specifically, a bubbly mixture with some fresh fruit popped in the top of the glass. I have served pomegranate, raspberry, and orange versions, so I was ready for a change this year…. and boy did I discover one!

did someone say rosemary infused syrup??
The first thing to remember about any signature drink, is that you are probably going to need a simple syrup to jazz things up. I decided to infuse the syrup with some fresh rosemary sprigs instead of just a “simple” sugar and water mixture. I knew I was on to something the minute my kitchen filled with the fabulous smell of rosemary bubbling away on the stove.

As you are aware, I love to tease my family and friends with a secret ingredient quiz. It is so fun to see what everyone guesses what it could be, and it is also a great ice breaker at a dinner party! I decided to experiment with some tequila for my secret cocktail ingredient. I know!! Champagne and tequila…suddenly this cocktail was becoming more interesting.

After the rosemary syrup had steeped and cooled, it was ready to be mixed with the champagne and tequila. A generous squeeze of lemon juice helped to break the sweetness, and brightened the other flavors of the cocktail. The final ingredient for this special drink is ginger ale. A perfect bubbly, not too sweet, effervescent addition to my new favorite cocktail. A simple raspberry was the final perfect touch to put all of your guests in a festive mood. In other words, pop a bottle and make a toast to the holiday season!

a bubbly effervescent champagne cocktail with a touch of tequila and rosemary infused syrup!

Ingredients
Rosemary infused simple syrup:
2 cups of sugar
1 1/2 cups water
4 sprigs of fresh rosemary
Cocktail:
2/3 cup of rosemary infused simple syrup
6 TB tequila
2 bottles of champagne ( you may also use prosecco )
1–2 TB freshly squeezed lemon juice
2–3 cups of ginger ale
fresh raspberry garnish for the top if desired
Instructions
Combine rosemary simple syrup ingredients in a medium sized pan
Bring to a boil
Lower to a simmer, stirring until sugar is completely dissolved
Remove from heat and COOL COMPLETELY
In a large container mix the champagne, tequila, lemon juice. and cooled rosemary infused syrup, and ginger ale
Pour in champagne glasses and top with a fresh raspberry
