captivating cantaloupe fresh from your local farmers market!
From time to time it is fun to put a new spin on a favorite appetizer. It is always good to mix it up since we are in the height of late summer entertaining. Cantaloupe is truly our most favorite treat of the farmers market. We have been buying the most juicy and flavorful cataloupe from our friends at Wheatfield Hill Organics for many many years. Garrett and Maddie have been going to our local farmers market with me since they were babies in their strollers. That stroller came in handy all those years ago to help carry our heavy loads to the car!

how did Garrett get so tall?
As long as I can remember, we have eagerly anticipated the week where the cantaloupe arrives fresh from their farm. When you cut open the cantaloupe, it immediately drips all over your cutting board. When have you ever experienced that before? Suddenly you have summers most delicious treat right in your very own kitchen! This fresh from the farm organic cantaloupe is the most compelling evidence of why Garrett is 6′ 3″! At least that is what we tell everyone! When Garrett and Maddie were growing up, we ate 3-4 of these glorious cantaloupes a week.

Meanwhile back to the recipe… Although we have always loved these cantaloupes plain and simple, it was time to make a new appetizer for my latest dinner party. Years ago we loved to make a summer salad with cantaloupe and prosciutto. I decided that it would be delicious to make a portion of the salad for an appetizer. The salty thin layer of prosciutto combined with the silky layer of goat cheese was already irresistible, but when you wrapped it like a little present with the cantaloupe inside it is hard to stop popping them in your mouth. In short, we have another repeat visitor on the appetizer list. One or three or five are never enough!

A delicious combination of fresh cantaloupe and prosciutto that will leave your appetizer tray empty!

Ingredients
One half of a cantaloupe seeded and cut in bite size pieces
8 paper thin slices of prosciutto
4 oz goat cheese at room temperature ( I like to use a flavored goat cheese, and so far honey flavor is my favorite!)
4 oz softened cream cheese
2 TB white balsamic
5 stems of stripped thyme (If desired add more for a garnish)
Instructions
Cut cantaloupe in half and remove seeds
Cut sections of cantaloupe and cut into bite size pieces
Set cantaloupe aside
In a medium bowl combine softened goat and cream cheese (alternatively you may use a small food processor)
Mix until smooth
Add balsamic and fresh thyme
Lay strip of prosciutto on cutting board and cut into 4 sections about 1 1/2″ wide
Carefully spread a small amount of cheese on the prosciutto
Place cantaloupe in center of prosciutto/cheese
Wrap sides of prosciutto around the cantaloupe leaving parts of the cantaloupe exposed
Fasten with a toothpick and place on serving tray
