Bring on the Broccolini Beef Bowls!!
All of the sudden everyone loves bowls! They are usually as pretty to look at as they are nutritious and delicious to eat. I am all on board for a veggie, protein, and grain combination that is irresistible and beautiful to look at. It is also equally important that every item in the name of the recipe begins with a B! It all begins with a combination of a London broil beef, bright green broccolini, red and orange peppers, and your favorite arborio rice.

My daughter Maddie is the Queen of just the right this, and just a little more of that in creating sauce perfection. I have never known anyone who can search the pantry and refrigerator for the last and perfect addition to the sauce or glaze we are creating in a recipe. Maddie has been cooking with her mama since she was two years old! She loved to sit up on our big kitchen island and help with everything. Maddie has never been afraid to grab the unexpected, combine it with the ordinary, and end up in the category of extraordinary.

Everyone has been exposed to the uniquely savory combination of broccoli and beef somewhere down their food path adventure. It all begins with a big pot of water bubbling away on the stove to cook the rice. At the same time you can start chopping up your broccoli and peppers. You may choose broccoli or broccolini with this recipe. They are both equally delicious. The broccolini adds a little more drama to your food bowl because it can curve around in a circle for extra bowl perfection.
The glazy sauce is a perfect Maddie combination of savory and sweet, along with a little zing of citrus. The secret ingredient for the sauce is the sweet chili sauce and spicy chili paste. It combines beautifully with the ginger and honey for lip smacking goodness. Chopped lemongrass adds the “what is that??” flavor to an already delectable sauce. Ingredients
2 cups uncooked arborio rice
1 pound of rare London broil beef (found in most delis)
2 TB cornstarch for dusting beef
2 bunches of broccolini
3 peppers ( I like orange and red for this recipe)
Glaze:
1/2 cup orange juice
2 TB rice vinegar
3 TB soy sauce
2 TB honey
2 tsp freshly grated ginger
1 TB freshly grated orange zest
zest and juice from 1 lime
2” finely chopped lemongrass
2 TB sweet chili sauce
1 TB spicy chili paste
salt and pepper to taste
Instructions
Prepare arborio rice according to package directions
Combine glaze ingredients and set aside
Chop broccolini and peppers in long strips
Heat 1/2 cup water in large skillet on high heat
Add broccolini and cook until bright green – 2 minutes
Remove broccolini from skillet and repeat with peppers
Cut beef in strips and dust with cornstrach
Lower heat to medium
Add beef strips to skillet and cover with reserved glaze
Add reserved broccolini and peppers and heat to serving temperature – 2-4 minutes
Place broccolini, peppers, and beef side by side with rice in a bowl, or alternatively serve mixture over rice
