Decadent AND Easy!
If you are looking for a light and creamy mouth watering dessert that is EASY and painless to make, (not bake!) you have found the right place! We have all enjoyed a tiramisu or two in our day, especially if you are like me and LOVE coffee ice cream! I wanted to take the original coffee version and amp it up a few notches. Tiramisu has always been a favorite go-to dessert when I am looking for a cold and creamy light dessert after a big meal. It is also easy to prepare the night before you are serving it. All tucked away in the refrigerator ready to WOW your family and friends.

Here Comes the BOOZY part….
Fair warning: this version has a moderate amount of rum and Kahlua, so please serve this dessert only to the people that it is appropriate to serve it to. I wanted to intensify all of the original flavors, and this began with a TIRAMISU flavored mascarpone cheese that I found at the store. Who knew? Along with the golden rum, I added Kahlua to bump up the coffee decadence. The lady finger cookies are quickly dipped in the golden rum and kahlua mixture. This begins the transformation from crunchy cookie to creamy coffee flavor.
What Do Whipping Cream and Food Processors have in Common?
After the layers have stacked together and been refrigerated overnight, I like to add a fresh whipped topping on the day that the dessert will be served. I like to whip my whipping cream in the food processor. It is a fast and efficient way to create dense whipping cream in a short amount of time. Be careful not to mix it too long, or the cream will become too chunky to use. I like food processor whipping cream when I am frosting or filling a cake with whipping cream.

The final perfect topping on just about everything is shaved chocolate. I decided to push the envelope one step further and add toasted coconut curls from the snack aisle. If you have not added these amazingly fabulous chips to your life, you have to get some right now! I will let you decide if you should use the plain coconut chips or the chocolate ones. The crunchy coconut chips mix with the chocolate curls to create topping nirvana. Cold creamy custard coffee chocolate coconut creation, and a description where every word starts with a C! You will be thrilled when all of the dessert plates arrive in the kitchen scraped clean.

Ingredients
Cream Sauce:
6 room temperature egg yolks
1/2 cup sugar
1/4 cup golden rum
1/4 cup Kahlua
1 small pop top can of espresso coffee drink (about 1 cup)
16 oz. tiramisu flavored mascarpone (if tiramisu flavor is not available, use regular mascarpone)
Cookie Dipping Layer:
2 7oz packages of biscotti ladyfingers
1/4 cup golden rum
1/4 cup Kahlua
1 small pop top can of espresso drink ( about 1 cup)
Topping:
1 pint of heavy whipping cream
1/4 cup powdered sugar
Bittersweet chocolate bar for shaving curls
Coconut chips (plain or chocolate)
Instructions
Pour the egg yolks and sugar in a large mixing bowl (use a stand mixer with a whisk attachment if available)
Whisk on high for 6 minutes
Add the rum, Kahlua, espresso, and tiramisu mascarpone and mix until smooth
Pour the rum, Kahlua, and espresso drink in a shallow bowl and dip the top and bottom of each ladyfinger biscotti in the mixture
Line 1/2 of the dipped ladyfingers in a 9 x 12 pan
Top with 1/2 of the reserved cream mixture
Repeat the ladyfinger dipping and carefully layer on top of cream mixture
Top with remaining cream mixture
Cover and refrigerate overnight
On the day you are serving the dessert, pour the whipping cream in a food processor and process just until firm. This should only take a few minutes.
Add 1/4 cup powdered sugar and process until just blended
Remove plastic wrap from dessert and cover the top with dollops of the whipped cream
Carefully connect the dollops of whipped cream with a knife – “frosting” the top of the tiramisu
Use a wide vegetable peeler on the side of room temperature bittersweet chocolate bar over the top of the dessert to create chocolate curls
Top with coconut chips
