beautiful brussels sprouts = new favorite recipe!
From time to time when you are playing around in the kitchen, you fall head first into a new favorite recipe! To put it another way, THIS IS THAT RECIPE! It checks all of my fall baking boxes. Delicious freshly shaved Brussels sprouts, gorgeous purple cabbage, and fennel. Those three ingredients take the starring role in this salad, and it just gets better from there.

Sometimes you just crave a break from all of that pumpkin spice. Especially when Brussels sprouts are in high season, and begging to be a part of your fall menu. I usually prefer my Brussels sprouts roasted. Brussels sprouts are sooooo cute! They look like tiny little cabbages all lined up. If you ever get an opportunity to buy them fresh on the stalk, grab them and go!

All of the shaved beginnings of this salad are mixed together with some more of my favorite ingredients. The creamy lemon dressing had to be full of a power punch taste to compliment the Brussels sprouts. The fresh lemon, grainy mustard, and mayonnaise are a great beginning, but the dressing is raised to the next level with the addition of fresh lemongrass, mint, and tarragon. Fair warning, this dressing is addictive! Now this could be a great place to stop and enjoy a great salad, but why stop now? I decided to sprinkle some pomegranate seeds, pistachios, and avocado on the top to really push things over the flavor edge.

In summary, not only is this salad power packed with flavor, it may be the prettiest salad I have ever seen! I can’t take my eyes off of the gorgeous combination of the bright ruby red pomegranates mixed with the lime green avocados and pistachios. Initially you may be drawn to this salad for it pretty looks, but you will keep making it for its crunchy texture and creamy lemony dressing. Grab some Brussels sprouts and cabbage and get going!

Shaved Brussels sprouts, cabbage, and fennel with creamy dressing and topped with pomegranates, avocados, and pistachios – gorgeous and delicious too!

Ingredients
1 pound of shaved Brussels sprouts
1/4 of purple cabbage shaved
1/2 fennel bulb shaved
creamy lemony dressing:
1 cup mayonnaise
3 TB grainy mustard
4 TB honey
2 TB white balsamic vinegar
Zest and juice from 1 1/2 lemons
6 mint leaves minced
4” stalk of fresh lemongrass minced
2 sprigs of fresh tarragon chopped
salt and white pepper to taste
Topping:
1 avocado sliced
2/3 cup pistachios
1 pomegranate seeded
Instructions
Cut bottoms off of Brussels sprouts and cut in half.
Shave in a food processor. Alternatively you may chop finely with a knife or grate with a food grater
Shave cabbage and fennel the same way
Combine creamy lemony dressing in a medium bowl
Pour shaved Brussels sprouts, cabbage, and fennel in a big bowl
Drizzle creamy lemony dressing over the top
Sprinkle with pistachios, pomegranates, and sliced avocados
