Sooner or later, we have to accept that we are in the fall season. How can it be dark at 7:00 pm? It seems like only yesterday we were out enjoying an after dinner dog walk or bike ride. These days we are getting cozied up by the fire. (both inside and out!) For all of these reasons, it is time to break out our family favorite bag chicken recipe! It combines all of the hearty and seasonal vegetables that are still available at your local farmers market. I know it is my cue to grab this recipe whenever I think of October’s crisp evenings.

Garrett, Maddie, and I have been preparing bag chicken for many years. In fact, it is one of our most beloved recipes. It has always been a family favorite, and that is especially nice when you are trying to make a dinner that both of your children will love. It is a great recipe to make with your children, because it is so fun to throw all of the ingredients in a big bag. This recipe also provides a great beginning opportunity to learn about chopping potatoes and carrots. Garrett and Maddie have both always loved to help in the kitchen, and we have a lot of fun getting our chopping boards going!

Bag chicken is just how it sounds. A big cellophane bag is filled with a fresh chicken, potatoes, carrots, parsnips, shallots, and last but not least, a delectable sauce. The delectable sauce consists of white wine, red wine, and hearty seasonings. Specifically garlic, rosemary, and thyme. The bag and all of its contents are placed in a big roasting pan and placed on your oven. Suddenly your kitchen is filled with the warm and hearty smell of roasted chicken and vegetables. Can anyone say warm and cozy??

A little flour is the first magic ingredient that is added to the bag. The flour quickly turns the delectable sauce into a savory sauce that can be ladled over the chicken and veggies. Your family can enjoy a beautiful fall day while the chicken and veggies are in the oven for a couple of hours. Finally it is time to remove the bag chicken from the oven. Your entire house will be filled with the aroma of comfort. Slice open the bag and bring the bag right to the table! Of course you may transfer the chicken and veggies to a serving platter if there are fussy people in your family! Bag Chicken

The first cold weather dinner you will make again and again! Grab a baking bag and stuff it with a chicken, potatoes, parsnips, and delectable sauce!

Ingredients
1 roaster chicken
2– 3 pounds of fingerling or red potatoes chopped
12 medium to large carrots chopped ( more if smaller carrots)
6 parsnips chopped
6 shallots peeled and cut in half
1/4 cup flour for inside of baking bag
Delectable Sauce:
1 cup white wine
1 cup red wine
3 TB soy sauce
5 cloves of minced garlic
1 tsp salt
2 tsp freshly ground pepper
10 sprigs of fresh thyme stripped ( additional sprigs for garnish if desired)
1 tsp dry thyme
3 sprigs of fresh rosemary ( additional sprigs for garnish if desired)
1 tsp dry mustard
Lemon zest and juice from 1 lemon
Instructions
Preheat oven to 350 degrees
Open large cellophane baking bag and pour 1/4 cup flour inside. Shake to coat inside of bag. Set aside
Chop potatoes, carrots, parsnips
Peel and half shallots
Combine delectable sauce ingredients in a medium bowl
Place cellophane bag in a large roasting pan
Put chicken in center of bag
Place prepared vegetables in the bag all around the chicken
Pour delectable sauce on top of and all around chicken and veggies
Incorporate flour into sauce
Tie bag shut with plastic tie that comes with the bag
Pierce the top of bag with 4-5 fork holes to allow for steam to escape
Place in oven and cook for 1 1/2 hours
After 1 1/2 hours, remove from oven and make a small slit in the top of the bag. Check to see if potatoes and carrots are fork tender. If not, return to oven until fork tender
When veggies are cooked, remove form oven and make a larger slit to expose the top of the chicken
Turn oven to broil
Spread 2 TB butter on top of chicken
Return to oven for a few minutes until top of chicken is golden brown
Remove from oven and serve
