REMIX TIME!!
From time to time it is fun to update a classic recipe. Everyone loves a bacon, lettuce, and tomato sandwich, but when you add salmon and avocado to the mix, the result is mouthwatering. To explain, the first time we thought to make this delicious sandwich was after a night of grilling too much salmon for dinner. If you are lucky enough to be in this predicament, you are half way there! And on most days there is usually bacon in the refrigerator. One thing led to another, and before you know it a favorite sandwich was born. BLATS for short. This acronym reminds me of a beer that used to be brewed in Wisconsin, but that is another story.

Lemons make everything taste brighter AND better!
Equally important to the delicious bacon, lettuce, avocado, tomato, and salmon is the lemony sauce that holds everything together. I started mixing a few ideas together, and came up with a lemony mixture that made the rest of the sandwich sing! I also like to layer droplets of the sauce between the sandwich ingredients. This method makes certain that every bite is the best bite. In addition to the lemony sauce, I like to squeeze fresh lemon juice between the layers of the sandwich for a bright burst of flavor. This also keeps the avocados fresh and in their natural gorgeous green.

Everyone has their favorite method of cooking bacon. My daughter Maddie taught me a fool proof way to make perfect bacon without all of the stove top mess. First we layer a sheet pan with tin foil, making sure to cover every corner. Lay the bacon down and cook in the oven to your desired crispiness. The best part of this crispy bacon is the cleanup. Simply fold up the tin foil and throw it away! Voila!! no mess to clean up on the stove.(except for that old spaghetti sauce)

The crispy bacon mixed with the grilled salmon is such a good match. And when you combine them with the avocado, tomato, and lettuce, one sandwich is hardly enough! Shake up your regular BLT routine and give this one a try. You will WOW your family and friends with this one. And it is always fun to have a new sandwich combo up your sleeve. Especially when the summer tomatoes are stacking up on your counter just waiting to be sliced up for a delicious treat.

Bacon Lettuce Avocado Tomato Salmon Sandwich BLATS for short!

Get ready for your new favorite sandwich! BLATS = bacon lettuce avocado tomato and salmon sandwich!

Ingredients
1 package of thick cut center bacon
lettuce – I like butter lettuce
1–2 avocados (depending on how many you like to pack in your sandwich!)
2–3 medium tomatoes
2 serving pieces of grilled salmon
sliced bread
lemony sauce:
2/3 cup mayonaise
4 TB mustard
2 TB fresh lemon juice
grated zest from 1 lemon
additional fresh lemon juice to drizzle on the sanwich
Instructions
Preheat oven to 400 degrees and completely cover a sheet pan with tin foil
Separate the bacon slices and place them on a sheet pan leaving some space between the pieces
Bake for 20 minutes or until desired crispiness
Place sliced bread on plate or serving platter
Spread lemony cream sauce on one slice
Place salmon on second slice
Drizzle salmon with fresh lemon juice
Add droplets of lemony sauce to top of salmon
Top with sliced bacon
Add a few more droplets of lemony cream sauce ( why not?)
Top with sliced avocado
Drizzle fresh lemon juice on top of sliced avocados
Place sliced tomatoes on first slice of bread with lemony cream sauce
Place tomato slice of bread on top of avocado, bacon, lettuce, and salmon side
Cut sandwich in 1/2 and dig in!
